Jack Daniels Smoked Ribs

So I got a smoker for my birthday. I've been wanting to use it to make a post for ages and have only just gotten around to it. I actually used it to smoke some skate wing a few days ago and was planning to post that but well... it tasted like shit. Idk if I just don't like skate wing or if I did it wrong or what but it was both too fishy and disintegrated in my mouth like wet sand. I made some amazing creamed ramps to go with them though. I'll post that recipe once I buy more ramps. So for this I decided to go with a meat I knew a little better. And I have like no pork recipes on here. I smoked these with Jack Daniels smoking chips (retired oak whiskey barrels) but you can subsitute any wood if you can't find those. My Kroger just happened to have them. 

The sauce I made myself. I think everyone should make their own barbecue sauce. It's so easy it's basically just doctored ketchup and you can flavor it however you want. I made mine with whiskey to go with the jack Daniels chips and a bit of coffee to add depth. I forgot to write down the recipe but you can find Jack Daniels barbecue sauce recepies online. 

These ribs were cooked in three different ways. I first smoked them for two hours to get the nice smokey flavor into them. Then I cooked them until they were almost done on the grill to caramelize the sauce and get them nice and crispy. Then I put them in the oven for another hour to render the fat and connective tissue and get them nice and tender. You can do the oven first or the grilling first, but I've found that a combination of these three things leads to the most perfect ribs I've ever had in my life. 

To make these ribs, you will need

1 lbs boneless country style pork ribs. 

1 handful of Jack Daniels smoking chips (or other smoking wood)

Barbecue sauce of your choice (preferably homemade)

Salt and pepper

Set the smoker up however yours is set up. I only know how mine is set up so I can't give instructions on that. 

Smoke those ribs for at least 2 hours. While they're smoking make your sauce, watch some Netflix, and post pics on facebook so I can see. Once they have turned a deep golden color on the outside, take them out, season with salt and pepper, and brush one side with your sauce. 

Reserve some for dipping in a different bowl, don't want to get raw pork in the dipping sauce. Then plop them on a hot grill sauce side down (obviously). While one side cooks, brush the other side with more sauce. Do this until you don't want any more sauce or until you run out of sauce for brushing. Once the ribs are nicely caramelized, take them off the grill, wrap them in foil, and bake at 300 degrees for 1 hour until a knife goes through them like softened butter. That's how you know they're ready. 

I was so busy eating the ribs I totally forgot to take a picture of the finished product lol. Oops.
